Shout out to my bro’s fiance. I pretty much outsourced finding healthy recipes to her. She loves Pintrest. Bitches love Pintrest.

Parm meatballs

What you need:

  • 1 1/4 pounds ground chicken
  • 1/2 cup breadcrumbs
  • 2 tablespoons chopped onion
  • 1 tablespoon chopped parsley
  • 1/2 cup Pecorino (or Parm)
  • Salt(if you use it)
  • Pepper to taste
  • 1 Garlic Clove, Minced
  • 1 tsp Fennel Seeds
  • 1 Egg, Whisked
  • Zest of 1/2 Lemon
  • Olive Oil
  • 14-oz Pizza Sauce
  • 4 oz mozzarella

Notes:

Looked at this recipe and found it to be fairly easy, so I modified it. I added/substituted the following

  • Used 3 1/2 pounds ground Turkey instead of chicken
  • Forgot parsley….my bad
  • I used 1/2 onion instead of just 2 tbsp
  • I also added turmeric cause I use that shit in a lot of my cooking to reduce inflammation.
  • I also added 3 servings of Egg Whites. All bout dat protein.

For the sauce I used Wegman’s Chunky Marinara Pasta Sauce(Organic). I also had Trader Joe’s shredded Mozzarella instead of sliced cheese. Worked out just fine.

I will always look for ways to boost the protein of the foods I cook. Also, I never use added salt to my cooking. I honestly just rather not, your decision.

What to Do:

  1. Preheat oven 400°F
  2. In a large bowl, mix Chicken(turkey), Breadcrumbs, Onion, Parsley, Parm, Salt(if used), Pepper, Garlic, Fennel Seeds, Egg, Lemon Zest, and Olive oil
  3. Shape into lacrosse ball sized balls
  4. Place on a baking sheet(line it with foil first).
  5. In a small bowl mix spoonful of sauce with olive oil.
  6. Brush some of the sauce on each meatball.
  7. Bake for 15 minutes
  8. Remove form oven.
  9. Spoon sauce on top of each meatball and cover with some cheese.
  10. Bake again for another 3-7 minutes or until cheese is bubbly and golden.
  11. Heat sauce in saucepan.
  12. Take out of oven and enjoy!

Again, another STUPID EASY recipe. So great and it made me 4 meals of 3 meatballs each. I bought some Spinach Fettuccine from Wegman’s to add to the sauce but it was not necessary. Love the flavor the lemon zest added. I ended up with some HUGE delicious balls.

I have been using MyFitnessPal to keep track of my Macros. It is working great. According to my recipe(with turkey and egg whites) these are the number PER MEATBALL.

Total Calories – 275

Carbs – 13g

Sugar – 4g

Fiber – .6g

Fat – 11g

Sat Fat – 2g

PROTEIN – 31g

Good shit in my book.

#100HappyDays: What It Meant to Me and Why you Should FUCKING Do It – Part 1/4

I am not quite sure why I am writing this, much less why I am going to post it for others to read. Anyway, here we go…

I first heard about 100HappyDays from my friend John. I did not know what it was or that it was an ‘in’ thing to do. I just honestly thought it was a great idea.

#100HappyDays found me at a time when I was at a serious down point in my life. I think so far 2014 has been the hardest and best year of my life. I broke up with the only girl I can say I truly loved. I thought she was ‘the one’ so much so that I moved in with her. Quickly we both realized that it was a mistake and that we were not meant to be. Not only did I not have a girlfriend or apartment now but I had moved in with her after leaving my childhood home, a safe haven and somewhere I always thought I could go back to, and it was no longer there. Thing was my parents decided to sell it. With not real place to go I ended up on my brother’s couch. That move alone made me rethink everything in my life. I felt as if everything had been a wrong step. I was a day late and dollar short, SOL everywhere I turned. I was beginning to rethink my career(or lack of it), my lack of college education, my lack of financial stability, and to top it off I lost my dog(as is she doesn’t live with me).

With what seemed like so much negativity in my life, here came 100HappyDays. Such a simple concept, so stupid, yet so brilliant. I decided to say fuck it, knowing I would get hated on by social media. It is so weird that whenever you try to do something positive in your life, people react so negatively. I see it all the times with clients of mine who are trying to lose weight only to be sabotaged (consciously or unconsciously) by those they care about and love the most. Fuck em, hate all you want bitches. I went ahead and those 100 days really did have an impact on me. And now whenever I feel down I have a list of 100 reasons why I love my life.

I was not so sure why I started, but I found out as I went on. I know of other people who did it because it was the ‘in’ thing and got nothing out of it. Such a waste.

Was it annoying to do? Did I forget to post some days? Did people comment and criticize? Abso-FUCKING-lutely! But I did it anyway, and cannot say how glad I am that I completed it.

I am breaking this list into 4 posts. Here are Days 1-25:

I open up my email to this lil gem. I am not sure if it was a trick or a mistake. As soon as I opened it, I DIED laughing. So hilarious I sent to almost everyone I knew. O and this was also the night those FUCKERS put post-it notes all over my car.

Remedial Recipes – Quinoa Enchilada Casserole

  • 1 cup quinoa
  • 1 can (10-ounce) Enchilada sauce
  • 1 can (4.5-ounce) Chopped green chilies, drained
  • 1/2 cup canned corn kernels, drained
  • 1/2 cup canned black beans, drained and rinsed
  • 2 tablespoons chopped fresh cilantro leaves
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Kosher salt and freshly ground black pepper, to taste(I don’t use salt)
  • 3/4 cup shredded cheddar cheese, divided
  • 3/4 cup shredded mozzarella cheese, divided
  • 1 avocado, halved, seeded, peeled and diced
  • 1 Roma tomato, diced

Notes: I added 1 cup of Lentils which I cooked with the quinoa. Also I am eating this with chicken breast that I made a separate day. I also made this in a Crock Pot instead of the oven. I got all my stuff from Trader Joe’s(seriously love that place). What to Do:

  1. In a large sauce pan add 2 cups of water and cook quinoa(use instructions on package) then set aside
  2. If you are using an oven, preheat it to 375 and prep an baking dish with oil/spray. If you are using a Crock Pot just set it on Medium heat.
  3. In a large bowl, mix quinoa, enchilada sauce, green chilies, corn, black beans, cilantro, cumin, and chili.
  4. Season with pepper
  5. Add 1/2 c Cheddar Cheese and and 1/2 c mozzarella cheese.
  6. Spread quinoa mixture into the prepared baking dish or Crock Pot.
  7. Top with remaining cheeses.
  8. Place into oven and bake until bubbly and cheeses have melted, about 15 minutes or maybe an hour on the Crock Pot.
  9. Serve garnished with avocado and tomato

This was so stupid easy and made quite a bit. I used a Crock Pot and set it for an hour but I doubt it needs that much time. I like to boost the protein of my dishes which is why lentils were added. Steamed vegetables were also added because I fucking need my greens. You can add this to a lot of foods to make them more delicious. I added it to plain chicken breast but also had it with ground beef on a separate day. DELICIOUS!

Remedial Recipes – Pepperoni Pizza Cauliflower Casserole(with Mods)

This recipe I got from yummly. It is an awesome site and it has an app. Use it to find some delicious recipes. I was not crazy about this but also did not hate it. It is low carb(ish). Especially if you decide to stay true to the original recipe. You can find that here:

  • 1 Head Cauliflower
  • 2 tbsp Heavy Cream
  • 1 tbsp
  • 20 Slices Pepperoni
  • 1c Shredded Mozzarella Cheese
  • Ground Turkey(optional)
  • 1-2c Marinara Sauce(optional)
  • Olive Oil(optional)

Notes: I added the Ground Turkey for the protein and Marinara Sauce cause why not? Instead of regular pepperoni I used turkey pepperoni that I previously boiled to get rid of some of the salt. Also, I used more pepperoni than the recipe called for also for the protein. The heavy cream drove me crazy. I should have substituted but it wasn’t that much to really concern me. I kept it in because the first time I make a new dish I try not to deviate too much. When I place the puree and turkey in a dish before cooking I layered it(one layer puree, one layer turkey, one layer cheese). Thought it was a good idea. What to do:

  1. Preheat oven to 375.
  2. Clean and trim cauliflower and cut into medium pieces.
  3. Place cauliflower in bowl with 2 tbsp cream and 1 tbsp butter.
  4. Microwave uncovered for 10 minutes.
  5. Take out and stir.
  6. Microwave for another 6 minutes or until it is tender.
  7. Take mixture out and place in blender(I used my Magic Bullet) with 8 slices pepperoni and 1/4c cheese.
  8. Puree until it is smooth.
  9. Brown turkey by place it on a hot pan with olive oil.
  10. Spread cauliflower puree and turkey in a casserole dish.
  11. Cover with 1/2 c shredded mozzarella and layer with pepperoni.
  12. Bake at 375 for 20 minutes. (apparently you can microwave it for 5 minutes also)

I was not too crazy about this dish after I made it but the next day I tried it again and enjoyed it. I will probably make it again because it is so damn easy. If you made it and improved on it let me know! Christian cmm1003@gmail.com

Remedial Recipes – Homemade Kale Chips

I love Kale chips. But they are so damn expensive and I rarely buy them. I decided to make them at home (shout out to my possible relative’s Asian fiance). They are so easy and delicious.

What you need:

  • Kale
  • Seasoning of your choice
  • Olive Oil
  • Cooking Spray

Notes:

Since I did not get this recipe from anywhere I didn’t provide exact measurements of what you need so just figure that shit out on your own. Also you can use whatever seasoning you want. I decided upon garlic power and pepper to keep it simple. Lastly, dry the kale. I was impatient and didn’t allow it to dry all the way. Don’t do that.

What to do:

  1. Preheat oven to about 250.
  2. Wash and dry Kale. Seriously dry the fucking Kale.
  3. Put olive oil and choice of seasoning in large bowl.
  4. Put kale in bowl and mix it all together.
  5. Spray a large baking sheet and spread kale evenly.
  6. Place in oven for 20-30 min or until Kale is crispy.

Enjoy that shit! Loves me some Kale chips.

 

 

Remedial Recipes: Black Bean, Sweet Potato, and Quinoa Stuffed Bell Peppers(with Mods)

I am definitely fucking making this one again. Not only did it get me a lot of the stuffing, more than I could use for the peppers, but it is fucking delicious. This recipe comes once again thanks to Ambitious Kitchen. Props to my sister in law for sending it to me via Pintrest.

What you need:

  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 1/2 large yellow onion, diced
  • 1/2 jalapeno, seeded and diced
  • 3/4 cup uncooked quinoa
  • 2 cups vegetable broth, divided
  • 1-15 oz can black beans, rinsed and drained
  • 1 medium sweet potato (peel if you prefer and I used 2)
  • 2 Roma tomatoes, seeded and chopped (I used what I had, not clue what type they were)
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/2 cup chopped cilantro(forgot this)
  • 1 teaspoon red pepper flakes (not necessary)
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt (rarely if ever do I cook with salt, this was not one of those times)
  • 3 large red bell peppers, seeded and cut vertically
  • 3/4 cup reduced fat shredded colby jack cheese

Notes:

I added:

  • 4 Chicken Sausage, diced
  • 1/2 c lentils

I cooked the lentils with the quinoa. I added the chicken sausage because I am not vegan and prefer to add some kind of meat/poultry for the extra protein. Beef could have also worked really well with this. I also used 4 red peppers and more cheese.

What to do:

  1. Preheat oven to 400 degrees.
  2. Using a saute pan over medium heat with olive oil, add onions, jalapeno, and garlic.
  3. Saute until the onions are translucent. Then place in a bowl to the side
  4. Cook Quinoa (see bottom) then add into bowl with onion mixture.
  5. While quinoa is cooking, bring water to boil in medium pot.
  6. Add in sweet potatoes.
  7. Cook for about 6/7 minutes or until sweet potatoes are soft.
  8. Drain water from sweet potato pot and add to onion and quinoa mixture.
  9. Also add in black beans, tomatoes, 1/2 cup veg broth, chili powder, cumin, oregano, cilantro, red pepper flakes, and pepper.
  10. Gently Mix it all together.
  11. Place red peppers on a baking pan and stuff with mixture.
  12. Cover with foil and cook for 20-30 minutes.
  13. Uncover then sprinkle cheese on top.
  14. Place back in oven for 5 minutes.
  15. BOOM DONE BITCHES!

How to Cook Quinoa(with lentils):

  1. Rinse quinoa (and lentils if added) using a mesh strainer in cold water.
  2. Bring 1 1/2 c of veg broth to boil in medium saucepan.
  3. Add quinoa (and lentils) and bring to boil.
  4. Cover, reduce heat and let simmer for 15 min (it will absorb all the broth).
  5. Fluff with fork.

Seriously this came out really well. Like I mentioned before I had extra stuffing which makes a great meal by itself. Highly recommend to eat with Greek Yogurt instead of sour cream. If you still use sour cream go ahead, but plain Greek Yogurt is a great substitute and tastes the same (seriously try it). You can also add salsa, guacamole, or plain avocado.

Remedial Recipes – Squash/Sweet Potato Medley

I am definitely very attached to this recipe. Firstly, I have a huge sweet tooth. This is a healthy way to satisfy that craving. Secondly, and most importantly I came up with it on my own. Now I will not take full credit for it, I am sure this amazing combination of squash and sweet potato has been thought up by someone else before. However, I did not find a recipe for so I will take credit. On top of being absolutely delicious this recipe fulfills all my criteria:

  • Cheap(I am a poor rican and am on a budget)
  • Easy(I have remedial culinary skills)
  • Quick
  • I need to make multiple meals at once(work smarter not harder)
  • I can mix it with peanut butter

I do not really measure my stuff out so the ingredients are mostly eyeballed. Here goes:

What You Need:

  • 1-2 Acorn Squash
  • 1 Butternut Squash
  • 3-4 Medium Sized Sweet Potatoes
  • 1-2 Tbsp Olive Oil
  • 1-2 Tbsp Cinnamon
  • 1-2 tsp Nut Meg
  • Cooking Spray

What to Do:

  1. Preheat oven to 375ºF.
  2. Clean the squash and sweet potato then let soak so they are easy to cut.
  3. Peel the squash.
  4. Cube both types of squash and the sweet potatoes.
  5. In a large bowl, mix squash and sweet potato.
  6. Add Cinnamon, Oil, and Nutmeg into the bowl then mix.
  7. Cover large baking sheet with aluminum foil.
  8. Spray sheet with cooking spray.
  9. Spread mixture evenly on sheet.
  10. Place in oven and let bake for 35-45 minutes or until soft.

Notes:

I eyeballed the portions for the cinnamon, oil, and nutmeg. You can really put as much as you want for either ingredient. For the cooking spray I used Trader Joe’s Coconut Cooking Spray. If you would like, you can peel the sweet potatoes but it is not necessary. Cutting the squash can be tricky, maybe one day I will write a tutorial on how to do it but, for the time being use these:

I love mixing my food. When I made the Stuffed Acorn Squash, I had more stuffing that I needed. I mixed that stuffing with this medley and was pleasantly surprised.

Remedial Recipes: Lentil and Quinoa Chili

For my recipe this week I decided to go with Lentils and Quinoa. I bought both a few weeks ago at an Indian Food store but had no idea what the hell to do with it.

Lentil/Quinoa Chili

I am no vegan but I decided to give this a try. I have full intention of adding chicken later on(usually have chicken cooked at all times).

What you need:

  • 1 Tsp olive oil(I used Wegman’s Basting Oil cause damn it is good)
  • 3 Garlic Cloves, mince that shit
  • 1 onion, chopped
  • 1 red pepper, diced
  • 2 pounds Tomatoes(I got organic canned from Stop and Shop)
  • 1 Tsp cumin
  • 4 Tsp Chili Powder
  • 1/8 Tsp cinnamon
  • 1/4 Tsp curry powder
  • Pepper to taste
  • Salt(I never use salt to cook but you may want to)
  • 1 Tsp Turmeric (added it cause inflammation sucks and this helps, read about that shit)
  • 3 C of Vegetable broth(Got mine organic from Stop and Shop)
  • 1 C of Lentils, Rinse it
  • 1/2 C Quinoa, Rinse(I made such a mess with this)
  • 15 oz Can Kidney Beans, Rinse and Drain
  • 15 oz Can Black Beans, Rinse and Drain
  • 1/2 C Cilantro(I forget to use this)
  • Avocado(optional but why wouldn’t you use it)

What to Do

  1. Heat oil in large pot.
  2. Add Garlic and cook until slightly brown
  3. Add Onion and Red Pepper and cook for about 5 minutes until the onion is translucent
  4. Add Tomatoes, cumin, chili, turmeric (optional), and pepper
  5. Bring that shit to a boil and then lower to a simmer. Cook for 6-8 minutes. Tomatoes will begin to get mushier(that a word?)
  6. Add Broth, Quinoa, and Lentils. Bring to boil then simmer. Cover and let cook for 30-40 minutes.
  7. Add Black Beans, Kidney Beans, and Cilantro(I forgot this). You can add the rest of the broth here if you want.
  8. Let cook for few minutes
  9. Top with Avocado and cilantro
  10. ENJOY that shit!

Notes:

Today was actually really damn easy and I made a shit load of chili. I can actually follow a recipe…sort of. I added more lentils than it called for because it seemed like too little. It took me about 36 minutes for the lentils to get soft enough for my liking. DAMN did the lentils fill up the pot after I was done. I thought the chili was going to spill over. Also the Quinoa expands. So watch out how much of both those ingredients you use. If you do not already go do yourself a favor and buy Wegman’s Basting Oil…HOLY SHIT does it make anything you cook better. I use it to make omelets and it makes a huge difference. Also, watch how the hell you rinse Quinoa. I used a regular plastic strainer that I thought had small holes. No it did not. Fuck did I make a mess. Super annoying but I suppose I learned to not be a dumb ass.

Remedial Recipes: Stuffed Acorn Squash

I need to learn to cook….badly. Normally, my meals consist of grilled chicken, steam fresh vegetables, and some kind of sauce. Lately, it has been tomato sauce and I have added Spaghetti squash. It is ridiculously easy to make and is great for a low carb meal.  All you do is wash it, stab it, then place it in the microwave for about 10 minutes. BOOM. Seriously look that shit up.

Chicken gets old though and I love food. For 2014 I am going to make a  new normal, cook regularly that are outside of my comfort zone.

Upon my weekly visits to food market establishments, I purchase something I have not yet tried. I  am venturing into uncharted palate territory to find a new delicious sources of sustenance. I bitch out sometimes but when I do that I feel a disservice is being done. Originally, I would find a recipe online then go out and buy the ingredients. This sounds great in theory but most of the time I would forget and arrive with no idea what to buy. I rethought my plan and decided to just buy something then find what to make with it later. This is my most current attempt.

For me recipes need to fit a certain criteria:

  • Cheap(I am a poor rican and am on a budget)
  • Easy(I have remedial culinary skills)
  • Quick
  • I need to make multiple meals at once(work smarter not harder)
  • IF I can put nut butter on it, that is a big BONUS

What you need

  • Acorn Squash
  • 1 pound Ground Beef
  • 1 Onion
  • 1 Apple
  • 6 slices of bacon….or 10
  • 1 Tbsp Rosemary
  • 2 tsp Thyme
  • 1 tsp Sage
  • 1 tsp Black Pepper
  • ½ tsp Cinnamon
  • ½ tsp Sea Salt
  • ¼ tsp Nutmeg
  • 1 Bottle of wine

Notes:

The recipe did call for 2 tsp of fennel seeds but honestly, I have no idea what the hell that is. They did not have it at Trader Joe’s so I left them out.  I used Granny Smith apples because Trader Joe’s told me to on the sign and turkey bacon because I already had it. I also bought their Coconut oil spray for the baking sheets. The wine was for drinking during cooking.

What to do:

  1. Preheat the oven to 375ºF.
  2. Cut the Squash in half then take the seeds out. Place on baking sheet. Be smart use foil to make life easier also spray that shit so avoid a sticky mess.
  3. Roast until flesh is tender. Took me about 50 minutes.
  4. Let cool. About 10 minutes.

Work smart, while that part is being done do the next few steps:

  1. Dice apple, onion and bacon.
  2. In large skillet brown the bacon, then throw in onions for 5-10 min (they will become translucent), then throw apples in for another 5-10 min.
  3. Remove the mixture and using the same skillet add ground beef and let it brown.
  4. Add all the spices. Mix then remove and add to the bacon/apple/onion mixture. Mix that shit.
  5. When the squash is cool to the touch use a scooper to take out some of the flesh. Don’t wait too long or it will get hard.
  6. Throw it in with the beef and mix that shit up.
  7. Put it all in the squash boats.
  8. Place in oven for 15 minutes at 375ºF until it is heated.

If done properly you accomplished a few things.

  1. You made a delicious meal with extra stuffing for later meals.
  2. You are drunk (like I am writing this).
  3. You finished a bottle of wine.

Who does not love some delicious Nut Butter?

I decided to dedicate a post to one of my favorite things to eat. You guessed it…NUT BUTTER! Fuck it lets throw in seed butter too. I don’t hate. There are many different types:

Peanut
Almond
Hazelnut
Macadamia
Cashew
Walnut
Pistachio
Pecan
Sunflower Seed

Besides being absolutely fucking delicious, there are several reasons why I love nut/seed butters:

Protein
Fiber
Healthy Fats(unsaturated)
Phytochemicals (think cancer prevention)
Can be paired easily with other foods for awesome combinations of amazingness
Simple and easy to keep on you

I am not one to go around preaching about Natural/Organic over regular but I try to only eat natural nut/seed butters. Yes, that means that there is oil separation. To me that is a great thing because the oil at the top is the unsaturated fat that is liquid at room temp. To most it is nasty and tend to buy other natural brands with no oil separation. These brands will use emulsifiers to keep the fats together. Some manufacturers will use ingredients such as palm oil to help keep the oils together. This is great and all but I am not a fan of vegetable oils in my food, especially when I see no reason for them to be in there. Seriously vegetable oil sounds nasty to me. What vegetable has oil come out of it? Well rapeseed, soybean, corn, sunflower, etc. This may sound great but the oil in these cannot be pressed out and separated naturally, they have to use chemicals. Keep in mind the sources of these oils are usually GMO foods(for all my down with Monsanto crusaders).

Hydrogenated oils are another way to prevent oil separation. Hydrogenated oils are trans fat. Do I need to go into that? So you can imagine my disgust when I see some precious nut butter with Hydrogenated Vegetable Oil on the ingredient label. Like I said I am not an organic/natural nut(see what I did there?) but I do like my food minimally processed for the simple fact that I think it does taste better.

For me the only thing I like in my nut or seed butter is well just the nuts or seeds. I love going to Whole Foods and pressing that shit myself. Seriously go try it. It is awesome.

IF the oil separation does really bother you, try this simple trick. Flip the jar upside down. Oil will go to the top(bottom of the jar) and when you open it you will have an easier time stirring and enjoying. If you do flip it, twist the cap a few extra times around or you will have a mess when you open it. You can even go a step further and put it in the fridge. Remember unsaturated fats are liquid at ROOM temperature so in the fridge they are solid.

There are lots of ways you can enjoy the amazing nut or seed butters but the following are some of my favorite:

Spinach or Kale Shake
1 Cup Milk
Spinach or Kale to preference
1-2 TBSP of Nut or seed Butter
Protein Powder
Water

MIX that shit up. BOOM great breakfast. I do it every morning.

Sweet Potato and Nut/Seed Butter Mash
1 Sweet Potato
1-2 TBSP of Nut or Seed Butter
Whey Protein(for the extra protein intake, optional)
1/4 cup or less water or milk
Cinnamon to taste

MIX that shit up! Looks so nasty. But tastes so damn good

Nut/Seed butter with

Apples
Bananas
Celery
Rice Cake
Ezekiel Bread(try cinnamon raisin)

Or a good Old fashioned….PB and J.
